Coconut kernel is the white fleshy endosperm of the coconut seed, surrounded by a brownish, thin layer of testa (seed coat) and a thick, hard endocarp.

From this part of the coconut, various products are derived, ranging from lower-end items like copra, coconut oil cake to value-added products like desiccated coconut, and coconut oil.

These products have culinary uses and are also key ingredients in cosmetic and medicinal products.
